A simple way to cook most fish fillets

Preheat the oven to 200ºC, fan 180ºC, gas 6 or fire up the BBQ

Line a baking tray with tin foil and place the fillets.

Brush with crushed garlic in cold pressed rapeseed oil.

Season with plenty of freshly ground black pepper, sea salt and some lemon quarters.  A sprinkling of crushed chilli flakes is great too unless it's intended for the kids.

Fold the foil over the fish to create a parcel and cook for 10 minutes
