One Pot Potato & Pork Chilli

We received this recipe from Countryside Online but used our Pork Shoulder which is best when slow cooked so we extended the overall simmering time to around 90 minutes, however if you used fillet, loin or pork leg you could reduce to the original 35 minutes overall cooking time.

We also didn't have a jar of chilli con carne sauce and so we used a tin of tomatoes, a tsp of chilli powder, and a good glug of sweet chilli sauce.  We also used a tin of black beans (peas) in place of the kidney beans.

Tasted pretty darn good and we'll be cooking it again very soon!

Ingredients

  • 1 tbsp oil
  • 500g diced pork leg
  • 1 yellow pepper, diced
  • 800g potatoes, diced
  • 410g can kidney beans, drained and rinsed
  • 500g jar sauce for chilli con carne

Method

  1. Heat the oil in a large saucepan and fry the pork and pepper for 5 minutes.
  2. Add the potatoes, kidney beans and chilli con carne sauce. Wash the jar out with a little water and add to the pan.
  3. Bring to the boil, cover and simmer for 25 minutes or until the potatoes and pork are cooked throughout. Serve immediately.
